Mushroom Soup

1 large onion
300g mushrooms
vegetable oil
2 stock cubes

Chop up the onion and mushrooms and fry in the oil for   10 minutes. Put in a blender with any juices that are in the pan and add in the   stock cubes and 100 ml water. Blend until smooth. This makes quite a thick   consistency so add more water or some soya milk if you wish it to be   runnier.
