These sugar free sweets can really help to finish off a delicious meal.
Use the same amount of cashew nuts and apricots and put in food processor and mix until smooth. Add almond essence and taste until the mixture has the flavour of marzipan.
Then form the mixture into small balls and dip in vegan carob or chocolate (to keep the sweets sugar free you can use sugar free chocolate). Place into small cake cases and put into the fridge to set.
These are lovely eaten cold, or can be packaged up and given as presents.
